Here we are a few days later. Things are getting really quiet around the neighborhood and the city. Not many people are out and about. The governor of Texas has declared all schools closed until at least April 3rd. I'm sure things will be reassessed at that point.
There's been one nice thing about this whole quarantine mess, and that's having an artist in the house. My daughter drew this on her chalkboard wall in her room. It's from an actual photo with Freddie Mercury on Darth Vader's shoulders. Here's a comparison of her drawing and the original photo. It's pretty cool.
Another nice thing we've been learning is trying some new food recipes. I was able to just try doing something with chicken tenders and made a nice little dinner out of it.
5 or 6 chicken tenders
2 tsp rosemary
2 tsp of salt
3 tbsp olive oil
Put a pan on the stove at about medium high. Let the pan heat up and then put in the olive oil.
Put in the chicken one piece at a time in the pan.
Put sprinkle 1 tsp of salt and 1 tsp rosemary all over the chicken and let sear on one side for about 3 to 4 minutes.
Turn it over and sprinkle the remaining salt and rosemary. Let cook for another 3 to 4 minutes or until done.
Remove from heat and serve immediately. The chicken will be quite tender and have a nice flavor. my wife and kids love it.
